Ingredients
  • 2 tsp coriander seeds
  • 3 tbsp sesame seeds
  • 3 fresh green chilies
  • 4 tbsp chopped fresh coriander
  • 2 tbsp chopped fresh mint
  • 3 garlic cloves, peeled
  • 1 x 3.5 cm (1 1/2 inch) piece fresh root ginger, shredded
  • 1 tsp salt
  • 175 ml (6 fl oz) ml natural yogurt
  • 1 x 1-1.25 kg (2-2 1/2 lb) kg chicken skinned and cut into 8—10 pieces
  • 5 tbsp corn oil
  • 2 onions, diced
  • 4 green cardamoms
  • 1/2 tsp mixed peppercorns
  • 1 cinnamon stick
  • 150 ml (1/4 pint)t) ml water
  • To Garnish:
  • 2 fresh red chilies, chopped
  • 1 tsp chopped fresh coriander
Instructions
  1. Place the coriander seeds and sesame seeds in a spice grinder and grind to a paste.

  2. Put the spice paste into a food processor with the green chilies, coriander, mint, garlic, half of the ginger, and the salt and grind for a few seconds. Pour in the yogurt and process for 20—30 seconds. Transfer the mixture to a large mixing bowl.

  3. Blend the chicken pieces with the spice mixture and set aside.

  4. Heat the oil in a handi or large saucepan and fry the onions with the
    cardamoms, peppercorns, and cinnamon stick for 3—5 minutes.

  5. Add the chicken pieces and stir-fry for about 5 minutes until well blended. Pour in the water to loosen the sauce and cook for 10 -15 minutes or until the chicken is cooked and the sauce is quite thick.

  6. Serve directly from the handi, garnished with red chilies, fresh
    coriander and the remaining ginger.
